ZULU ZESTY RIBS

Ingredients:
4 Racks of Baby Back Ribs
Sauce:
1 Cup Red Wine
1/2 Cup Brown Sugar
8 Garlic cloves minced
3/4 Cup Zulu Sauce

Procedure:
Cut Ribs individually and place in baking pan lined up tightly next to each other. Combine all ingredients for the sauce in a bowl then pour over the ribs and place in oven at 250 degrees for the 1st hour. After the 1st hour turn up the oven to 350 degrees for the 2nd hour. Finally turn up the oven to 375 degrees for the 3rd and final hour. Garnish: Toasted Coconut shaving work well on top as well as extra Zulu sauce to spice it up a little.

LAMB KEBAB

Ingredients:
1 Lbs. Lamb Loin
8 Sm. New Red Potatoes cooked
4 Halved Apricots
1 Sm. Red Onion Basting Sauce
2 oz. Zulu Sauce 2 oz. Honey
2 Garlic cloves
1/2 oz. Cilantro Squeeze of Lime

Procedure: Pre-cook potatoes then skewer cubed lamb, onions, potatoes and apricots and place on the grill at high heat and brush with basting sauce. Serve when cooked hot.

ZULU RIB EYE

Ingredients:
1 C. Red wine
3 cloves garlic minced
3 Red Peppers julienne
3 Rib eye Steaks
1/2 C. Zulu Sauce
1 C. chopped Basil leaves
1 C. Whipping Cream

Procedure:
Sauté peppers, wine, Zulu sauce and garlic until the wine has cooked away using a medium heat, this way the peppers will have time to cook. Once the wine has all evaporated turn heat off let cool ten minutes and place your steaks on the grill. Then place whipping cream and basil leaves into the pan and bring to a low boil. Keep cooking and stirring the sauce until it is the thickness you would like, preferably not runny. Then pour sauce over steaks and serve.

LAMB OR BEEF SWAZI
Ingredients:
1 1/2 Lb. Of Lamb leg or Shoulder
1/4 Cup Swazi Sauce
1 Cup diced Onions
3 cloves minced Garlic
1/2 diced Tomato
1/3 Cup White wine
2 TBLS Honey
3 TBLS Olive Oil
1/3 Cup Cream
1/2 chopped Tomato

Procedure:
Place Lamb in baking dish cover with onions, honey, Swazi Sauce, garlic, wine and olive oil. Place in oven at 400 degrees for 35 minutes. Next remove Lamb pieces from dish and set aside. Then put remaining juices in a sauce pan and bring to a boil and slowly add cream and tomatoes. Sauce is now ready to place over the lamb and serve.

MALAWI GOLD DIP

Ingredients:
2 Cups Mayonnaise (Fat Free optional)
3 1/2 TBLS Malawi Gold
Plenty of dill to taste
3 TBLS minced Onion
Salt to taste 4 oz.
Can drained chopped Clams

Procedure:
Mix all of the above ingredients in a bowl. Serve with veggies of chips. This can be made with any of the Ukuva Sauces. Hints: Garnish with chopped green onions. Options: Add crab or shrimp meat if desired. For a creamier dip use 2 Cups Sour Cream instead of mayonnaise.

SWAZI CHICKEN WINGS

Ingredients:
1 cup Swazi Sauce
1 Tsp. Rice Vinegar
3 TBLS Honey
1.5 pound Chicken Wings
2 TBLS Miso paste (optional)
2 TBLS Stoneground Mustard

Procedure:
Mix all ingredients except Chicken Wings in a bowl. Add chicken; coat well with the sauce and place on a baking sheet in the oven at 425 degrees for 45 minutes.

Garnish:
Use Red Onion and Red Bell peppers and serve on a tray
